Lentils are an awesome plant based protein that is perfect cooked on it's own or added to a soup.

Lentils are a great source of protein, fiber and iron.

Lentils also cook fairly quickly so it can easily be incorporated into your meal.

Simple stewed lentil recipe:


1 cup lentil (sifted through and rinsed)

1 small tomato, chopped

1/2 small onion, chopped

4 cloves garlic, minced

1/2 bell pepper, chopped

Thyme sprig

1/2 tsp curry powder

Salt + pepper to taste

(Optional 1 cup chopped spinach/greens of choice)


Add lentils and water (at least 2 inches above lentils) to medium pot over high heat. Stir in tomato, onion, garlic, bell pepper, thyme, curry and bring lentils to a boil. Let simmer for 25-30minutes until lentils are soft; stir occasionally. Season to taste.

This stew pairs nicely with rice.
