March Is National Nutrition Month

March is National Nutrition Month and this year's theme is "Put your best fork forward." We are ultimately the one in control of our fork, so it is important that we make healthful and responsible food and nutrition choices. Small changes, like choosing a salad over French fries, have a positive impact on our health in the future. Eat Well, Live Well

Blood Orange <3

One of my favorite fruit of this season is the blood orange! It is the perfect combinations of sweet, slightly tangy, with a hint of raspberry? (at least that is what I taste!). The "blood" (or red) color of this variety of orange comes from the anthocyanin-- an antioxidant which may be beneficial in fighting free radicals which prevents cell damage!

Zesty Quinoa Salad

Today I would like to share my Zesty Quinoa Salad recipe. This hearty salad is refreshing and simple to prepare. Cooking quinoa ahead of time makes preparing this salad a breeze! . INGREDIENTS: 1 cup pre-cooked quinoa 1/2 cup chopped spinach 1/2 cup diced cucumber 1/2 cup chopped tomatoes 1/4 cup diced bell pepper 1 tablespoon each- chopped fresh cilantro and parsley Juice of 1/2 lemon (more to taste, if desired) Salt and Pepper to taste Avocado (optional) DIRECTIONS: 1. Chop all vegetables and herbs. 2. Place cooked quinoa in a large bowl. 3. Add vegetables, herbs, lemon juice to quinoa. Mix until well combined. And salt and pepper taste. 4. Serve salad cold.
