Today I would like to share my Zesty Quinoa Salad recipe. This hearty salad is refreshing and simple to prepare. Cooking quinoa ahead of time makes preparing this salad a breeze!
1 cup pre-cooked quinoa
1/2 cup chopped spinach
1/2 cup diced cucumber
1/2 cup chopped tomatoes
1/4 cup diced bell pepper
1 tablespoon each- chopped fresh cilantro and parsley
Juice of 1/2 lemon (more to taste, if desired)
Salt and Pepper to taste
1. Chop all vegetables and herbs.
2. Place cooked quinoa in a large bowl.
3. Add vegetables, herbs, lemon juice to quinoa. Mix until well combined. And salt and pepper taste.
4. Serve salad cold. If desired, top salad with avocado for a creamy component. Enjoy!!
