Red bell pepper is one of my favorite peppers due to it's slightly sweet taste and it's high content of vitamin c and antioxidants.
Red peppers can be eaten raw with your favorite dip (I prefer hummus!) , they can be stuffed with cooked grains or meat, they can be added to a stir fry or pasta dish, and the list goes on; bell peppers are very versatile.
